Get ready for some easter baking with
these cute free from cupcakes that are totally vegan!!
This recipe makes 8 delicious cupcakes and is so easy!!
Ingredients:
160g Gluten Free Flour
125g Caster Sugar
1/2 tsp Xantham Gum
1 tsp Baking Powder
1 tsp Bicarbonate of Soda
1 Pinch of Salt
60 ml Sunflower Oil
240ml Dairy Free Milk
1 heaped tsp Agave Syrup (honey alternative)
1 tsp Vanilla Extract
Topping:
For the decoration we decided to make a dairy free cream cheese frosting although this could easily be swapped for a butter cream or any topping you want. You can also vary the quantities to your personal preferences but this what we did.
To make the frosting you will need:
50g Dairy Free Cream Cheese
150g Icing Sugar
1 Pack of Rice Milk Chocolate Chicks
2 tsp Lemon Juice
Mix the cream cheese in a bowl to make smooth, slowly add the icing sugar mixing all the time. Finally add the lemon juice and mix, adjust depending on how thick or sweet you want the icing. Now it's ready for the cupcakes!
Method:
Now I wasn't lying when I said this was super easy, simply start by mixing all the dry ingredients together in a large mixing bowl. Once they are all combined slowly add all the liquids mixing between each ingredient. Once all the ingredients are in the bowl and the mix is looking smooth divide it up into your cupcake cases and bake for 30 mins at 180°C. Once cooled ice with your topping and finish off with our Rice Milk Chocolate Chicks - and voila, there you have a delicious little treat perfect for an Easter picnic!
