Valentine's cupcakes!

Our first recipe of 2022! It's been a while but we are kicking the blog posts back off with a quick and easy versatile bake. We did this for Valentine's using our Heart slabs but these cupcakes but would work for any occasion - just change the topping!

First of all you will need:

  1. 100 g of brown sugar
  2. 175 g vegan butter
  3. 250g Cocoa Libre dark raspberry chocolate slab (broken pieces bag)
  4. 75g flour
  5. 2 teaspoons of baking powder
  6. 2 ripe bananas
  7. Decoration - whatever you like!

 

 

 

    Method

  1. Heat the oven to 180C. Place the butter, sugar and chocolate in a heavy-based saucepan and heat gently until melted. Mix until smooth, then set aside to cool slightly.
  2. Sift the flour and baking powder in a bowl and mix to combine. Mash the bananas in a separate bowl.
  3. Mix all ingredients together. Spoon the mixture equally between the muffin cases and bake for 20-25minutes.
  4. To decorate, we use our heart slabs, vegan icing and some raspberries!
